Aún tenemos el inmenso privilegio de disfrutar en nuestra ciudad, sí nuestra ciudad, la que hoy pareciera que no pudiese aguantar una sacudida más, en un país que aparentemente “se agota” pero que generosamente nos sigue acogiendo a través del talento de personas, que como Héctor Romero @hector_romero_cocinero
Me inspira y admiro profundamente el oficio, ese que con las manos crea y hace arte. Por eso no es casualidad que uno de mis cocineros/chefs favoritos, Héctor Romero, sea un gran apasionado y profesional del arte plástico y la fotografía; un enamorado del mar y de sus olas, no en vano uno de sus sellos es trabajar con productos marinos de altísima calidad (la inclusión de huevas de pescado fritas, que solía comer con arepa de pequeño, es algo que podemos encontrar re imaginado en cualquiera de sus menús), y su gusto por la música de Jack Johnson y G Love 🏽

Pocas experiencias se comparan con una velada en el Comedor del Instituto Culinario de Caracas, donde Héctor dirige con su batuta mágica menús que nos pasean por el mundo apalancados en las raíces de nuestra tierra.
Lo que les pueda decir del menú mexicano que degusté la semana pasada se queda corto: desde un Pozole (sopa mexicana a base de maíz pozolero) reinterpretado con un caldo (casi bisque) de parguito rojo, una cochinita pibil que fue la reina de la noche y un mole poblano que cerró la primera parte de un menú que podrán seguir disfrutando este fin de semana.
Los más puristas dirán que el único sonido que debe haber en la sala es el que emiten los cubiertos sobre el plato, sin embargo, Héctor ha sido tan generoso que me ha permitido ponerle hilo musical al menú México Lindo y Querido 🇲🇽, y espero poder hacerlo con cada menú que decida elaborar de aquí en adelante; es y será un gran honor.
